Marjolein Kokosky Deforchaux-Kelderman is a researcher and writer specializing in Indo-Dutch culinary heritage. Together with her husband, she runs an Indo-Dutch takeaway restaurant in Rotterdam called Ap Halen. For her book Kokki Bitja: een boek over het oudste Indische kookboek uit 1843 she researched the history of the oldest Indo-Dutch cookbook which was published in Batavia (present-day Jakarta) in 1843. In order to share this culinary heritage with a wider audience and preserve it for future generations, she translated all 215 recipes from the first edition from pasar-Malay into Dutch. In her book the recipes are, in addition to the translation, also provided with a cultural-historical background.

Second Edition, 2025.
